Hearty Slow Cooked Beef

1kg of diced beef (cheap cuts are fine)

500g butternut pumpkin

4 Large Celery sticks

500g Butter or Portabello mushrooms

3 Medium carrots

1 large zucchini

2 large brown onions

1 tbs crushed garlic

1 x 400g can of crushed tomatoes

1/4 cup of tomato paste

Fresh Parsley


Finely chop onions and chop remaining vegetables, place all ingredients into a slow cooker and cook on low for 8 hours. Lift the lip and stir through only once (as you loose heat when you life the lid) Season with Salt, Pepper and fresh Parsley.
