Mediterranean grilled salad
500g Japaneese pumpkin
1 egg plant
2 medium zucchinis
2 red capsicums
1 red onion
4 cups of Spinach
1 tbs Flaxseed or Olive Oil
Juice of 1 Lemon
1/4 Cup of Apple Cider/Balsamic Vinegar
Chop Pumpki, Egg pant, Zucchini and Capsicum and place on baking trays under baking paper. Place in oven preheated at 180 degrees for 35 minutes
Once cooked and cooled slightly add to Spinach and sliced Onion in a bowl. Combine dressing ingredients and mix well in a jar or separate container.
Mix well and serve
Add to lemon poached chicken and make multiple meals.
